At the Ibéricos Torreón facilities we have carried out a series of significant reforms with the aim of improving the efficiency of the processes without losing the essence of the quality that characterizes our products . These changes, which have been implemented in different areas of production, reflect the company's commitment to innovation, sustainability and continuous improvement.
Renovation in the ham cutting and profiling room
The cutting room has undergone a profound transformation, where a cutting belt adapted to hygienic and quality needs has been consolidated, thus allowing a more efficient and safe process. The automation of the movements of the carcasses within the room facilitates more coordinated 'chain' work, optimizing the time dedicated to each piece of the Iberian pig for its correct cutting and profiling.
This redesign has allowed a 36% increase in the production of this section, maintaining the same human team, which speaks of a substantial improvement in productivity, which has increased by 40%. This achievement has been possible thanks to the implementation of automation mechanisms, the installation of aerial lanes/lanes and a better arrangement of the key elements in the process.
Marta Blázquez, Production Director of Ibéricos Torreón, considers it very important to highlight that “all these improvements have been made without sacrificing the quality of the final product, since everything is focused on mechanisms that not only improve the efficiency of the process, but also prevent errors. and improve the working conditions of workers.”
New salt chamber
In the quest to optimize each stage of production, Ibéricos Torreón has inaugurated a new salt chamber, which stands out for its design made up of several rooms and a capacity increased by 80%. This space has an innovative 'dry' refrigeration system, where the control of temperature and relative humidity in the air is automated and digitalized. Despite the innovations, Ibéricos Torreón maintains the salting process in a completely traditional way, that is, stacking the pieces to preserve the authenticity of the curing process by salting the Iberian ham and ensuring that the result is perfect.
Eco-efficient cooling system
Committed to the environment, Ibéricos Torreón has made a significant transition in its refrigeration system, replacing 60% of its old system based on fluorinated gases, known for their polluting impact, with ammonia. This change not only reflects the company's environmental responsibility but also its long-term vision, since it is planned that in the coming years, 100% of the facilities will be cooled using this system, highlighting ammonia for its minimal polluting impact and its high energy efficiency.
Photovoltaic solar plant for self-consumption
At this point it is also worth highlighting that the roofs of the Ibéricos Torreón facilities have a solar plant with the capacity to produce 101 kWp. Through 207 photovoltaic modules, with a nominal power of 490 Wp each and covering an area of 507 square meters, they generate enough solar energy to cover 26 percent of the electricity required by their work in the ham and sausage factory. Villares de la Reina (Salamanca). And what is more important, they avoid the emission of 786.5 tons of CO2 into the atmosphere, which allows them to reduce the carbon footprint of this productive activity that we carry out.
