Iberian Onion Soup

Who can refuse a tasty and comforting spoon dish these days? Here we have a clear answer... it is almost impossible to find someone... That is why we are going to propose to prepare a delicious Iberian Onion Soup that will satisfy all the members of the house, with a very convenient recipe, especially if you follow the instructions of our head chef chef Javier Fuentes .

Furthermore, this is one of the recipes that comes in handy to bring out all the essence of that ham that came to an end after Christmas, don't you think?

Prepare all the ingredients and get to work!

Ingredients

  • 300 g of sweet onion
  • 170 g unsalted butter
  • 100 g of Iberian ham cubes
  • 1 kg ham bones
  • Bread, to taste, several slices
  • Parmesan cheese, to taste

Elaboration

Start by finely chopping the onion into julienne strips, and cook it in a pot with the butter and a pinch of salt to release the water, more or less for 30 minutes. Add the ham cubes. All together so that the onion cooks well, caramelizes and softens and so that the ham releases its fat and flavor. Leave the pot covered, but stir occasionally.

Meanwhile, you can make a ham broth with bones and water, let it boil, little by little skimming and removing the superfluous fat from the pot.

Once the onion is cooked well, add the ham broth, bring to a boil, reduce to low and cook for another 15 minutes to settle the soup.

Once ready, put it in a container that can be put in the oven, place some sheets of bread on top and grate the cheese to cover the soup.

The last step is to gratin in the oven at 250 degrees Celsius until golden and crispy.
