Torreón's Artisanal Iberian Sobrasada is the result of uniting two deeply rooted culinary traditions in our culture—Mediterranean and Iberian dehesa—in a meticulous and honest preparation that respects the origin and quality of each ingredient.

The character of this sobrasada begins with the selection of meats. To make it, we use Iberian Pork Loin tips, one of the noblest lean cuts of Iberian pork, which provide a fine texture and deep flavor. To this meat, we add the most select Iberian pork fat, essential to achieve the characteristic creaminess that defines great sobrasadas.
The result is a balanced base rich in nuances, where each element plays an essential role.
The perfect balance of spices
A good sobrasada cannot be understood without a well-chosen blend of spices. In our case, the recipe combines two great Spanish paprika references:
- Pimentón de La Vera, with its slightly smoky character.
- Murcian paprika, sweeter and more aromatic.
Salt and a delicate touch of pepper are added to this base, creating a blend that enhances the Iberian flavor without concealing its identity.
The result is an elegant, balanced, and deeply aromatic seasoning.

Once the mixture is prepared, the sobrasada is stuffed into natural semi-curled casing, a traditional detail that allows the product to breathe during the curing process.
Then comes one of the most important moments: the passage of time. For approximately two months, the sobrasada rests slowly in our natural drying rooms. During this process, the texture becomes increasingly creamy, and the flavor gains depth, developing that balance between intensity and softness that characterizes great artisan cured meats.
