That was the focus of the 13th World Ham Congress, where the message was summarized into three pillars: science, legal framework, and sustainability of origin.

Dr. Antonio Escribano, an expert in Endocrinology and Nutrition, highlights that the artisanal curing process transforms meat into a "biological matrix" where essential nutrients, difficult to obtain from other processed foods, are concentrated, thanks to a prolonged biochemical transformation during curing.

According to his explanation, this process generates more than 70 compounds including bioactive peptides and a high nutritional density:

  • High-quality proteins with essential amino acids.
  • 70% of the recommended daily intake of Vitamin B12 per 100g
  • Minerals such as heme iron, zinc, selenium…

Beyond its vitamin contribution, Iberian ham stands out for its fatty acid composition (50% and 55% of total fat). Due to acorn feeding and the genetic uniqueness of the breed, the final product has a high concentration of oleic acid.
