Our artisans make a precise and uniform machine cut, designed to preserve the natural juiciness of the piece and ensure that each slice reaches the consumer at its optimal point of texture, aroma and flavor. The Torreón Acorn-fed Iberian Ham Shoulder stands out for its balanced flavor, combining the intensity of the acorn with a soft and aromatic texture. Its organoleptic profile is the result of free-range feeding during the "montanera" season, where pigs enjoy acorns and natural pastures, along with the expert work of our masters.

This piece comes from the cross between a 100% Iberian mother and a selected lineage father, which provides a balanced fat infiltration and a characteristic flavor. After a minimum natural curing of 2 and a half years in our cellars, it reaches its ideal point of maturation.

The climate of Salamanca, with its stable temperature and dry air, turns our cellars into a unique environment to mature each piece slowly and naturally, achieving authentic and hard-to-match results.
