Signs that an Iberian ham is not in good condition
Although we have already mentioned that Iberian ham does not expire like other foods, there are some signs that may indicate that it is not in the best condition for consumption:
- Excessive mould: A slight amount of mould on the surface is natural and can be removed by cleaning the area. However, if the layer of mould is thick or covers a large part of the ham, it may cause unusual odours and flavours. To avoid this, you can clean the mould with a clean cloth and then rub the surface with a cloth soaked in sunflower oil. This will prevent mould and prevent the surface from drying out excessively.
- Bad smell: A strong and unpleasant aroma, different from the characteristic smell of cured ham, is a very noticeable sign that something is not right. Avoid eating it.
- Abnormal texture: Leathery and dry textures are associated with pieces with excessive curing, excessive salt or curing defects that have crusted the meat. Textures that are too soft or chewy may be associated with a lack of curing or salt levels that are too low.
