Chef Javier Fuentes del Río, head chef at Torreón, is crowned at the International Iberian Forum

If you follow us closely, you'll already know that at Torreón we don't just see Iberico as a product; we experience it as a culture, a legacy, and an emotion that we share around a table.

That's why we are so proud to tell you that our head chef, Javier Fuentes del Río, has been crowned the winner of the V International Cooking with Iberico Contest with his dish of 'Iberico pork a la royale, blood sausage and seaweed.'

Imagine, the best chefs in the industry gathered in front of the stoves at the Palacio de Congresos de Salamanca, facing an exceptional jury composed of great figures of our gastronomy such as Mario Sandoval, Carolina Álvarez, Rocío Parra, Miguel Ángel de la Cruz, and the critic José Carlos Capel. Amidst such tension and high standards, Javier cooked as he knows best: with calm, with absolute respect for the product, and with that special charm that blends traditional Salamanca roots with gastronomic avant-garde.

When his name was announced as the winner, it was a very special moment. For him, winning in his homeland is the reward for years of constant effort and loyalty to a raw material that is his weakness. And for us, it is the confirmation that the path we embarked on together 4 years ago has full meaning.

And speaking of 'paths embarked on,' it should also be noted that Javier once again had the help of a great assistant. Cooking alongside him was Carmen Blázquez García, a member of the Torreón Family who has been a very important part of this project and our way of bringing Iberico pork gastronomy to the consumer, despite having now embarked on another professional path.

Those of you who have been fortunate enough to visit our facilities and enjoy the Torreón Iberico Gourmet Experience know well what we mean when we talk about 'bringing Iberico pork gastronomy to the consumer'. Javier is the soul and the hands that guide our exclusive Iberico Omakase Menu.

In each session, in the gastronomic space of our factory, Javier stands before visitors as he prepares subtle, elegant, and flavorful bites, with the same care that our family puts into the curing of each piece.

In his dishes, the different cuts of Iberico pork demonstrate that this animal is an inexhaustible treasure for haute cuisine. As our General Director, Chus García, says: "this award shows us that the excellence of our products is also in the way we choose to bring Iberico to your tables. Javier has managed to capture that family and artisan philosophy in a world championship dish."

This trophy is coming home to Villares de la Reina, but not just to be displayed in a showcase. It will be reflected in the stoves, in Javier's hands, and in each of the tastings that await you if you visit us. Because the true prize is being able to continue opening the doors of Torreón to celebrate special moments in life with gastronomy with capital letters.
